EARLY MEMORIES

One of Chef Laura’s earliest memories while growing up in the Maritimes were the piles of dulse at the store. Cedar bins and paper bags filled with a limitless supply of the purple, aromatic sea vegetable. Dulse was a folk tradition. Something to be shared among generations of friends and family. Carried throughout the long summer days as a snack, an experience for the senses, a tangible part of East Coast heritage.

CULINARY EXPERIENCE

In the years since, Chef Laura’s professional culinary experience at the leading edge of innovative plant-based cuisine, combined with a passion for health and well-being, inspired a drive to create delicious and satisfying foods. Foods that are nourishing for the self and for the world.

A VISIT HOME

These early memories of dulse were revisited during a conversation with her siblings on a visit home. They wanted to find a way to celebrate the half-forgotten aspects of East Coast tradition and lifestyle. What could be a better emissary of Maritime heritage and values than dulse? Even more importantly, how could they reimagine a staple of this coastal region, while still paying homage to those childhood memories?
